Green Goddess Sweet Potato Latkes with Pomegranate Seeds

This is not a standard latke recipe as unexpected ingredients such as Pomegranate seeds, green goddess dressing, sesame oil, spring onion, and a savory salt from Momofuku all come together for a flavorful twist on a classic dish. Step 1

Chop fennel and chard. Set aside in a large pan with a drizzle of olive oil.

Step 2

Chop 1/3 scallion tops or spring onion tops and add to a large bowl or bowl of a stand mixer.

Step 3

Peel and halve the sweet potatoes, then shred them in a food processor. Add the shredded sweet potatoes, spring onion tops and flour to a large bowl or a stand mixer bowl.

Step 4

Add 1 teaspoon garlic granules, 1 teaspoon of savory salt and 2 eggs to the large bowl or a stand mixer bowl.

Step 5

Turn on stand mixer to medium speed and mix until combined. Or mix by hand until just combined.

Step 7

Spoon 5 tablespoons of the sweet potato mixture to your palm and press together.

Step 8

Gently add the sweet potato portion to the sesame oil in the pan and fry for a few seconds and then press to flatten. Continue forming latkes and add up to 4 or 5 latkes in the pan at a time. Fry latkes until golden brown on both sides.

Step 9

Once latkes are almost done with perhaps one batch remaining, sauté chard and fennel.

Step 10

To serve, plate and dress each latkes with a dollop of green goddess dressing, 1 teaspoon of pomegranate seeds. Add sautéed chard and fennel on the side with two pieces of duck breast prosciutto formed into rosettes.
